Yam, Carrot & Cinnamon Soup + Easy Lunch Solution

Why do we love soup? Yes, it’s comfort food. And yes, it’s warming to your body. And yes, it can be incredibly quick and easy to make. But given that we’re busy sisters who work, study, raise a child, and still try to have a social life with friends, cooking one nutritious and delicious meal each day can be demanding. So we love something like soup that can be made in big batches ahead of time, taken to-go, and easily re-heated!

Today’s soup is Yam, Carrot & Cinnamon. If you like a healthy dose of flavour, double up on the cinnamon (we sure do).

Curried Butternut Squash Soup

We’re huge soup fans. Like, huge! A fabulous catch-all for vegetables in your fridge, and super easy to make while you’re multitasking with that big life/work/home project (soup pretty much cooks itself!). This is an incredibly simple vegetarian, dairy and gluten free soup. If you’re a meat eater, you can use chicken stock instead of veggie stock. The key is to bake the squash first, so don’t skip that step!

This recipe is Willowtree’s September edition of the Willowtree / Heavy Petal extravaganza…you may have seen some of the recent posts where Tina & I at Willowtree create a seasonal recipe, and Andrea at Heavy Petal tells you how to grow the main, seasonal ingredient. We’re trying to help readers with how satisfying it is to grow & cook your own food, y’see?

This month we bring you Tomato & Red Pepper Gazpacho. Not unlike our Roasted Red Pepper & Tomato Soup, this is a refreshing twist to enjoy during the warmer months…or during the months that are supposed to be warmer, at least here on Canada’s West Coast, as experienced in years other than the current one (and if you are picking up any sarcasm there, then yes, you are getting our drift; neither we, nor our tomatoes, have enjoyed the lack of warm weather this year).

Veggie Chili

We are not huge fans of leftovers. Sure, you will find great recipes on Willowtree that can double as your Tuesday night dinner and your Wednesday afternoon lunch because we’re constantly told how busy people’s lives are, but eating the same thing two days in a row isn’t for everybody, and for the most part, it’s not for us either. Until, that is, we realized how this super easy Veggie Chili can save you when you’ve got a crazy busy week coming up, and tastes just as good the second day.

We are firm believers in the power of soup. Not only is soup a great way to make use of any vegetables in your fridge that might be on their last day, but also homemade, hot, delicious soup conjures up memories of being swayed back to health by our mother when we were kids.
