Tofino Cake Studio + Tina’s 30th Birthday

This is a snapshot of Chesterman’s Beach in Tofino. This is also a snapshot of the weather that Tina & I, along with our significant others, our brother, and several friends, were lucky enough to enjoy for the first week in October.

The occasion: Tina’s 30th birthday. We ate, drank, and stayed up way too late most nights. It was definitely a vacation in every sense of the word. A highlight of the trip and something we are excited to share with our food sensitive friends is Tina’s birthday cake. I considered making it myself, but I knew there were several food sensitivity friendly, healthy bakeries in Tofino and so the collective decision was made to have one of them make a perfect, beautiful, delicious gluten and dairy free cake. After a few emails to Chocolate Tofino and Sobo Restaurant (two places that are must-stops in Tofino) I was put in touch with Leah at Tofino Cake Studio.

Tofino Cake Studio is made up of Leah and her husband, Gordon, past owners of Chocolate Tofino. Bruce is a chef by trade and has worked with master pastry chefs in the past but he is a traditionalist and doesn’t dabble much with gluten free, etc.  Leah has been allergic to wheat for years and finally (after having hives forever), gave up wheat.  Since this, Leah started to develop wheat alternative recipes, keeping her husband’s techniques in mind.

We were lucky enough to have Leah offer to create a gluten AND dairy-free recipe just for us, and let me tell you: it was amazing! Incredibly moist, light, and fluffy – characteristics of a cake with alternative ingredients that as Tina & I can tell you first hand, can be incredibly difficult to perfect in baking. And happy 30th birthday to my sister – she really is the best friend, wife, sister and mother in the world. Love you TT. xo
